Dietary Manager: Sanitation and Safety Field Experience 


Topics focus on the prevention of foodborne illness, sanitation surveys and employees. Field experiences consist of independent study module that provide a series of experiences to be completed in the student’s facility under the supervision of a Registered Dietitian/Preceptor. Prerequisite: Completed or enrolled in Sanitation ServSafe class.

Dietary Manager: Dietary Field Experience - Foodservice Operations


This hands-on field experience includes food preparation principles, standard recipes, converting recipes, foodservice equipment, and planning food production schedules and menus. Prerequisite: completed or enrolled in Food Preparation/Production Laboratory, Food Preparation Principles, and/or Budgets/Purchasing & Inventory Control courses.

Dietary Manager: Nutrition / Field Experience


This nutrition module will cover normal nutrition, modified diet, nutrition care diet orders, nutrition assessment and nutrition patient education. Field experiences consist of independent study modules that provide a series of experiences to be completed in the student’s facility under the supervision of a Registered Dietitian/Preceptor. Prerequisite: Completed or enrolled in Preparation and Service of Modified Diets/Nutrition Care Planning.

Ten (10) nutrition hours of the required 25 precepted hours is directly precepted by a Registered Dietitian Nutritionist instructor in a modified diet classroom laboratory.

Topics focus on the manager’s role, professionalism, responsibilities, personnel issues and effective communication. Field experiences consist of independent study modules that provide a series of experiences to be completed in the student’s facility under the supervision of a Preceptor. Prerequisite: Completed or enrolled in Foodservice Management/Human Resource Management.

Dietary Manager: Business Operations Field Experience


Demonstrate ability to maintain foodservice department budgets, oversee purchasing processes, plan and budget for capital improvements, manage revenue generating services and implement cost effective practices to be completed under the supervision of a preceptor. Prerequisite: completed or enrolled in Food Service Management or Budgets, Purchasing & Inventory control.
